Thanks to Tom Parker’s post on this forum, I discovered a workaround on assigning custom colors to calendars created on the Apple iPad. The trick is that every time a calendar is added to the iPad, it picks the next color in it’s color scheme. It doesn’t register what a previous calendar’s color was if it is deleted.
Therefore, you can go into your Exchange settings, turn “Off” the calendar, then turn it on again. This will register the calendar as a new color. Keep flicking it off/on to cycle through the color palette until you arrive at a desired color.
